Today, the starting date for harvest is determined by prefectural decreet after consultation with winegrowers. Each plot's winegrower has the last word for the precise beginning and decides according to the maturity of his grapes. Harvest can take place when he judges the sugar/acidity ratio balanced. Winemakers usually do not harvest the grapes if it has rained as they would become waterlogged and the taste would be diluted. In Burgundy, the white grapes are harvested before Pinot Noir's.
