On Valensole plateau, the cultivation of lavender and lavandin has gradually replaced that of cereals, and particularly wheat, whose prices have fallen sharply. This trend towards monoculture does not however prevent the maintenance of the cultivation of cereals which, every six to ten years, takes over from lavander for 4 or 5 years in order to regenerate the soil.
