In 2001, Eric Westermann took over the Buerehiesel, the family’s gourmet restaurant located in the Orangerie Park in Strasbourg. His philosophy? A simple and affordable haute cuisine, which highlights fresh produce from the Alsace region. The chef always chooses the most local sourcing channels possible. He favours seasonal dishes and vegetables. According to him, it is better to eat chestnuts in winter than peaches! The result is a sophisticated cuisine, rooted in its terroir, which is highly appreciated by the people of Strasbourg.
