The picking of Grasse jasmine (Jasminum grandiflorum) takes place between August and October. The harvest is done in the morning, ideally at daybreak, when the flower exhales its most intense fragrance. It is a long, tiring, and delicate job that requires significant dexterity to cut off the jasmine flower without damaging it. Pickers must first select the mature flowers and then detach them one by one from the foliage and the stem by turning their hand a quarter of a turn without touching the bud flowers. The harvest's product is delivered to factories early in the afternoon for immediate processing.
