The production of 'popoi' - a fermented dough made from fruit or tubers from 'fē'ī', 'taro' or 'uru' - remains communal on the island of Rapa. At least six women traditionally gather to knead the dough which is then wrapped in 'auti' leaves to be fermented and stored underground up to several years.
