The coffee cherries grow in tight clusters in the axils of the leaves of the youngest branches. They are harvested 8 to 9 months after flowering, once they have reached maturity to allow the perfect development of the aroma of the beans they contain. Among the tribes of Poindimié, the picking is done by hand, cherry by cherry, but it can also be done with a comb, by shaking the coffee trees or even with machines on the plain plantations.
