The milk used to make Brie de Meaux cheese is raw cow's milk. A natural rennet (taken from the 4th stomach of the calf) will start the curdling process. 40 to 60 minutes are generally necessary for Brie de Meaux. Large slices of curdled cheese are then placed in a mold using a Brie shovel. It takes about 6,5 gallons (25 liters) of milk to make a cheese of about 7,71 lbs (3.5 kg).
