Already during the Renaissance, kings François I and Henri IV praised the merits of Ay wines. Later, Louis XIV would associate the Champagne sparkling wine with luxury and fashion. Not far from Epernay, the Grand Cru village of Aÿ-Champagne is one of the main centres of the Champagne industry. Only 17 villages are classified as Grand Cru in Champagne. This classification is based on criteria of soil, slope, and exposure. Aÿ-Champagne is home to around 25 winegrower-manipulators and a handful of major champagne houses (Bollinger, Krug, Mumm, Veuve-Clicquot, etc.)
