Le vieillissement sur lattes concerne uniquement les vins effervescents.
Il s’agit d’un processus de «prise de mousse » pendant lequel les bouteilles sont stockées en position horizontale, chaque rangée étant séparée par une planche en bois.
Très réglementé, le vieillissement sur lattes est obligatoire pour chaque type de champagne : 1 an minimum pour tous les champagnes, 3 ans minimum pour les champagnes millésimés.
