Breeding the oysters on Leucate's pond

Oyster is a bivalve mollusk that belongs to the Ostreidae family. It settles on rocks or muddy bottoms, and its consumption dates back to prehistoric times. Back then, it was mostly consumed by the populations which settled in coastal areas.
On the Salses-Leucate lagoon, and more precisely the Leucate pond, oysters are grown over an area of 550 hectares. Farmers use oyster beds that allow the mollusk to develop in semi-immersion conditions.
