Traditionally, the 'bougna' - these Kanak stews wrapped into banana leaves - are prepared at the end of the afternoon and are cooked at dusk. In the morning, the women of the Mu tribe tore off the tubers, chose the banana leaves and lianas, made firewood bundles, while the men prepared the location for the oven.
