Saint-Syndulphus Church extends inside Hautvillers Abbey, in the Marne department. It houses the tombstone of Dom Pérignon (1639-1715), who made the region famous. In 1668, his arrival at Hauvillers Abbey revolutionized the Champagne wine trade. He invented the principle of the second fermentation in the bottle and the cork that prevents the bottles from exploding. Dom Pérignon was also the first winemaker to produce a white wine with black grapes, a unique specificity of the Champagne region. He is said to have invented the méthode champenoise (Champagne method) that allowed the wine to become effervescent. When tasting his wines for the first time, Dom Pérignon allegedly said it was like drinking the stars.
