Banana leaves are widely used in the indigenous Kanak cuisine. They serve in particular to wrap the 'bougna', the manioc pies or the food cooked under ashes. These somewhat special containers also have medicinal properties. Under the effect of heat, the banana leaves namely permeate the preparations with their astringent and diuretic sap which also calms stomach burns.
