After Epernay and Reims, Aÿ-Champagne is one of the main centres of the Champagne wine industry. Only 17 villages are classified as Grand Cru in Champagne. This classification is based on criteria of soil, slope, and exposure. Aÿ brings together around 25 winegrower-manipulator. In the Renaissance, kings François I and Henri IV already praised the merits of Ay wines. Later, Louis XIV associated the sparkling wine of Champagne with luxury and fashion. Each terroir produces a slightly different wine depending on its land of origin. Champagne Collet stores its bottles for at least three years.
