At the heart of the French mustard production

Today, 90% of the French mustard production comes from Burgundy, where three hundred producers grow 10,000 tons of mustard seeds over 14,830 acres (6,000 ha). The sector comes under the Association Moutarde de Bourgogne that federates three main poles. The research pole carries out the selection of varieties and the search for references, while the production pole is managed by the Association des Producteurs de Graines de Moutarde de Bourgogne (Association of Producers of Mustard Seeds of Burgundy). Finally, a transformation center brings together regional mustard makers like Moutarderie Edmond Fallot, Unilever, Reine de Dijon, Européenne de Condiments, and Charonneaux-Brabant.
