Lavenders grow in areas subject to a Mediterranean-type climate in degraded environments (arid, limestone, and stony lands) and on the adret (sunny side) of the slopes. Aromatic, edible, and non-toxic, they belong to the botanical family of lamiaceae like sage, thyme, savory, oregano, mint, and hyssop. Lavenders are directly processed and distilled by the producers in cooperatives or sold to brokers or perfumers.
