The Camargue cattle breed owes its recognition and conservation to its aptitudes for games and racing traditionally practiced in the region. However, a large part of the herd is not suitable for arena games and is destined for butchery. The meat of Camargue bulls was enhanced by obtaining the AOC (Controlled Designation of Origin) label in 1996 and the European recognition of this label in 2001. It enters the ingredients of gardiane de taureau, the Camargue recipe par excellence.
