After the economic crisis of 1929, the idea germinated to certify the quality of Burgundian wines in order to encourage their sale. The aim is also to struggle against fraud by authenticating their origin. The Protected Designation of Origin in Burgundy (PDO or AOC), nearly a hundred, are established by decree between 1936 and 1937. They constitute a set of production rules listed in a very precise specification.
