The territory of the Causses and the Cévennes is listed as a UNESCO World Heritage Site. Traditional mixed farming has shaped a mosaic alternating hay plots with pastures and crops. Different forms of mixed farming coexist today, such as sheep and goat farming associated with the production and sale of AOC (Controlled Designation of Origin) cheeses like Roquefort, farmers Tommes, or Salakis. Summer moves to pastures on the high uplands of the Cévennes and the Lozère and Aigoual mountains keep following the Drailles, paths taken for centuries.
