An important economic stake

Around the Mediterranean basin and since antiquity, salt has been a huge economic stake. Since then, numerous exploitations have developed along the coasts. The salt of the Camargue is exploited for food, agriculture, as a raw material and for the chemical industry. At the end of the 19th century, the exploitation of the region intensified and became more structured: around Salin-de-Giraud, industrial production developed, while around Aigues-Mortes, salt was harvested for food use. The harvesting capacity of the salt pans around Aigues-Mortes is 450,000 tons per year for 10,800 hectares!
