Yves Raffatelli, the master macerator of the Domaines et Distilleries de Provence, for which he has worked for forty-three years, is the conductor of distillation. He is the one who determines when to stop heating the still to obtain the perfect aromatic notes. The infusion time of each plant is planned to the nearest day, variety by variety, then the infusions and the distillates are assembled with precision.
