An expanding fleur de sel market

Visiting the saltworks is one of the main attractions of the fortified town of Aigues-Mortes in the Gard department. These landscapes with mauve and pink reflections are discovered by more than 130,000 visitors each year, with a 50% increase since the late 2000s. Both properties of the Salin d'Aigues-Mortes group, La Baleine and Saunier de Camargue brands harvest and transport their production from the saltworks of the area. The fleur de sel market, widely developed in Aigues-Mortes' salt marshes, is currently experiencing a craze that goes hand in hand with a slight decrease in the consumption of classic table salt.
