Though lavender occupies more and more space on the Valensole plateau, it still leaves room for the cultivation of cereals. Indeed, out of drought episodes, the lavandin plants die after eight to ten years of cultivation, and those of lavender after six to eight years. It is, therefore, essential to change the crop so that the old roots do not pollute the new ones. Lavender and lavandin are generally replaced for four to five years by wheat harvested just before them, allowing the spreading of agricultural activities over time.
