With its eyes that seem drawn with black kohl, the Aubrac cow breed is recognizable among all. It is also known for its ocher-colored coat and large slender horns. An emblem of the Aubrac plateau, the species is native to the region and perfectly adapted to the harsh conditions prevailing there. It is renowned for its robustness and endurance and requires little food. The herds of Aubrac cows were once watched over by buronniers, cheese producers of the region.
