Château Malherbe in Bormes-les-Mimosas is an atypical estate that does not follow the regional rosé fashion. Its first became known through its white wines before developing its red wines about twenty years ago. Its rosé is moreover more of a 'bleeding' rosé which can be considered as a product derived from the making of red wine. It is born from the flow of a slightly colored juice at the start of the maceration in vats of the red grapes, while the most common technique for making rosé is direct pressing which gives a so-called 'press' rosé.
