After Epernay and Reims, Aÿ is one of the main poles of the Champagne wine industry. Its wines are classified 100% Grand Crus. Only 17 villages are labeled as such in the Champagne region. This classification is based on criteria of subsoil, slope, and exposure. The vineyard of Aÿ brings together around 25 winegrowers. During the Renaissance, kings Francis I and Henry IV of France already praised the merits of Aÿ's champagne, served at the royal court. At the Cité du Champagne, some of the bottles resting in the underground cellars date from the 1940s.
