The village of Colombiers is located in the Hérault department in the Occitania region. It extends 4.97 miles (8 km) southwest of Béziers. Colombiers developed in Antiquity thanks to its proximity to the Via Domitia that connected Rome to the Iberian Peninsula. Such a privileged location attracted the inhabitants of the oppidum of Ensérune, who came to settle in the plain along the Via. A fortified castrum was later built there in the Middle Ages, making Colombiers a prosperous seigniory. The development of viticulture in the region as well as the creation of the Canal du Midi have given the village its current economic and tourist position.
