A unique salt
The Camargue fleur de sel is a unique type of salt. Its delicate crystals are harvested every summer at the bottom of the many shimmering pink basins that surround the fortified city of Aigues-Mortes. This salt with a crispy texture consists of flakes created by a particular crystallization happening on the water's surface. Harvested by hand in Aigues-Mortes since Antiquity, the fleur de sel is the result of the work of Camargue's salt workers and the unique combination of the mistral and the significant amount of sunshine days characteristic of the region.
