Krystale oysters benefit from a unique farming method in hanging baskets rocked by the movement of the sea. This new farming technique was developed by the K'Dual family from 2008 in the area of Gouville-sur-Mer, on the west coast of the Manche department, from hanging bags manufactured by the Yad Marine company in Pirou. In these pockets, the oysters, fewer in number than in conventional pockets, are constantly tossed around so that they brew large quantities of water, feed on more plankton, and build more muscle. Their shells are harder and develop a beautiful mother-of-pearl on the inside. Fleshier, Krystale oysters have a sweeter taste.
