Unexploited since 1995, the salt marshes of Hyères in the Var department were temporarily put back into service during the summer of 2021 on five acres (three ha) of the Salin des Pesquiers. The initiative aimed to celebrate the twentieth anniversary of the takeover of the salt marshes by the Coastal Protection Agency. On this occasion, 2,500 sachets of fleur de sel harvested since July by Paul Simon, the last salt worker in position, Florient Junac, a member of the Salins d'Hyères management team, and Akim Richard, a seasonal worker, were distributed to visitors on September 11/12 during the Salins festival.
