The least populated natural region in France, the Aubrac plateau has one inhabitant per square kilometer. Land of wide-open spaces and immense landscapes, the Aubrac is a very popular crossing point for hikers. The old ‘burons’ (houses with slate roofs typical of the plateau) still dot the landscape. Some have even been given a new lease of life when transformed into restaurants and lodges. One can taste the aligot there, a culinary specialty made from mashed potatoes and fresh tome cheese.
