As its name suggests, Cantal is a cheese mainly produced in the eponymous department of Cantal. It extends in the extreme southwest of the Auvergne-Rhône-Alpes region and hosts La Grange de la Haute Vallée cheese dairy in Albepierre-Bredons. Cantal is a cheese with a Protected Designation of Origin (PDO), and its production is therefore controlled. Rare municipalities in the Puy-de-Dôme and Haute-Loire departments in Auvergne, as well as in the departments of Corrèze in Nouvelle-Aquitaine and Aveyron in Occitanie are also authorized to manufacture Cantal PDO.
