The milk used to make Cantal DPO cheese must correspond to the specifications of the designation. It must come from dairy herds made up of cows and heifers born and raised in the authorized geographical zone. The milk is also expected to come from farms whose surface is at least equal to 2.47 acres (1 ha) of total cultivated area per cow. La Grange de la Haute Vallée fulfills these conditions, with 116 acres (47 ha) of natural pastures for a herd of forty Montbéliardes cows.
