A regional corporation recognized in the 17th century

While mustard makers were recognized as early as 1412 in Paris, the statutes of the professions of vinegar maker and mustard maker in the city of Dijon were not published until 1634. The corporation was placed under the protection of Saint Vincent, celebrated on January 22. Its members were inspected (equipment, quality of vinegar and mustard, skills of apprentices and companions) and all the new mustard makers had to pay an entry fee. The statutes of the Burgundian mustard makers were revised in 1711 with, in particular, the establishment of an apprenticeship certificate. Alongside Edmond Fallot, other mustard makers have marked the history of Dijon mustard such as Naigeon, Grey, Freimiet, Sachot, Jacquemin, Dumont, Bornier, Mack, or Parizot.
