He notably ignores the regional craze for rosé and continues to highlight his historic whites and work on the estate's reds. All the wines of Château Malherbe are made from maturing grapes and long vatting with a late bottling. Sébastien Ferrari's vineyards, certified organic, are maintained in responsible farming and subject to low yields.
