The Moutarde de Bourgogne is made by the Moutarderie Fallot in Beaune in accordance with tradition. Slow grinding with a stone grinder followed by sieving gives it a creamy texture that reveals its strength and the aromatic power of its white wine. It is rooted in the Burgundy terroir thanks to the PGI (Protected Geographical Indication) certification obtained in November 2009. The label guarantees that the Moutarde de Bourgogne has been made with mustard seeds grown in Burgundy and dry white wines made from traditional Burgundy grape varieties, Aligoté and Chardonnay. Moutarde de Bourgogne is produced in the four departments that make up the Burgundy region (Côte-d'Or, Nièvre, Saône-et-Loire, and Yonne). The registration of the PGI guarantees producers the protection of the name Moutarde de Bourgogne throughout the territory of the European Union.
