Cantal is a PDO cheese from the Auvergne region made from raw or pasteurized cow's milk. Its uncooked pressed texture displays ivory to dark yellow color. The Cantal's rind forms, dries, and changes color as the cheese matures for a minimum of thirty days. Almost white when the cheese is young, the rind darkens until becoming golden, then brown. Cantal PDO is among the various regional cheeses produced at La Grange de la Haute Vallée farm in Albepierre-Bredons.
