A pink color accentuated by salinity

From the beginning of spring in the salt marshes of Aigues-Mortes in the Camargue region, the sauniers – salt farmers – begin to fill the basins with water using a canal linked to the Mediterranean sea. From March to August, seawater circulates from basin to basin in order to increase its natural salinity rate. This water evaporates little by little under the joint effect of the mistral and the region’s significant sun exposure. Gradually, the seawater concentrates in salt that eventually promotes the development of Dunaliella Salina, a micro-algae naturally present in this environment which gives the basins their signature pink color.
