On average, the cattle herd of forty Montbéliardes of La Grange de la Haute Vallée produces 74,000 gals (280,000 L) of milk each year. It represents around 1,850 gals (7,000 L) per cow. Bacteriological and physicochemical analyzes are carried out three times a month to monitor the quality of the milk. 90% of the production is intended for cheese processing, which takes place in a room next to the milking parlor.
