A medieval tradition

The tradition of salt meadows lambs dates back to the Middle Ages, supervised at the time by the monks of the abbey. Washed by the high tides, the salt meadows, or ‘herbus’, offer a completely different image of the bay. Tall, bright green meadows with glasswort and about thirty halophytic (salt-tolerant) plants. Today, there are only eleven Norman and Breton shepherds raising salt-meadow sheep. Since 2014, their lambs have received the PDO (Protected Designation of Origin) “prés-salés du Mont Saint-Michel” (Mont-Saint-Michel salt meadow lambs).
