Although seven grape varieties can be used to make champagne, the Chardonnay, Pinot Meunier and Pinot Noir varieties account for more than 98% of the production. Pinot Noir is the king grape of the Montagne de Reims, the Aube or the Côte des Bar champagnes: it gives body to the wine and aromas of red fruits. The cool, chalky soils suit it well. The wines of this terroir are distinguished by a pronounced structure. A champagne can be a “blanc de blancs” if it is made from Chardonnay and “blanc de noirs” if it is made from Pinot Noir or Pinot Meunier.
