According to a comparative study by the Idèle Environment Institute, Norman cows' milk has all the assets for sustainable development. Its calcium content reaches 1,315 mg/kg against 1,220 for the Holstein and 1,239 for the Montbéliarde. Such characteristics improve the quality of the cheeses and make the butter more yellow. The Norman is an easy-going breed that the Naturellement Normande farm promotes through its organic by-products.
