Since the 1920s, the Moutarderie Fallot has perpetuated the tradition of a mustard whose recipe has been passed down through generations. Edmond Fallot bought a mustard factory in 1928 and developed it, even during World War II. His son-in-law, Roger Désarménien, took over the firm in 1962 before his grandson Marc in 1997. Recipes multiplied, and many chefs incorporated Fallot mustards into their dishes. In 2009, Burgundy mustard obtained a Protected Geographical Indication (IGP).
