Janine and Denis Lelouvier have endeavored to adopt an organic approach in order to guarantee quality at all levels: meat, AOC cheeses, and milk. They first switched to 100% grass in 2014 before building a hay dryer for the winter in 2017 and organic cheese workshops in 2018. The farm's 55 dairy cows of the Norman breed thrive on 200 acres (80 ha) in Landelles and Coupigny, near Vire, in the bocage of the Calvados department.
