A differentiated vinification

The cellar vinification of the different vintages of Château Malherbe in Bormes-les-Mimosas is differentiated and parceled. All the cuvées, rosé or white, are aged on fine lees using a technique that does not separate the wine from its lees. Such process allows increasing the wine's density, roundness, and aromas. The white wine of Malherbe, made from Semillon and Rolle varieties, matures in demi-muids, large, resistant, and thick barrels with a capacity of 132 to 158.5 gals (500 to 600 liters). The red Malherbe made from Syrah, Grenache and Mourvèdre evolves inside oak casks. As for the rosé and white wines of the Pointe du Diable plots, they are made in stainless steel vats to preserve the integrity of the grapes.
