Agriculture began in the Plain of Troyes more than seven millennia ago when farmers from central Europe settled in the valleys of the Seine. They cultivated plants and raised animals domesticated in the Middle East for a long time. Over the following centuries, agro-pastoral practices kept evolving, depending on contacts, exchanges, and technical innovations. Men adapted to the constraints of the more or less fertile soils of the Champagne region and managed to develop vineyards.
