The different varieties of olives grown on Château Léoube estate do not all ripen at the same time, which complicates their harvest, especially since the maturity of olives of the same variety can differ on the same tree. The harvest is, therefore, adapted to each plot, tree, and variety. In order to preserve the qualities of the fruit, the picked olives (1 to 1.5 tons per day) are immediately transported to the Haut Jasson mill twice a day to be transformed into oil.
