A climate favorable to salt production

The Mediterranean climate of the Salins d'Hyères favors the production of salt by accelerating the evaporation of seawater in the retention basins through the combined action of sun and wind. The dry climate extends the production season and allows the harvest of a dry naturally white salt. It is still visible today despite the cessation of activity in the shallow harvesting basins of the Vieux Salins. The thin dusting of white crystals floating on the surface of the basins gives the fleur de sel (salt's flower), which used to be harvested by hand by the salt workers.
