In the days of the planted staff, the herds of Camargue bulls were kept watch by the herdsman on an ongoing basis. The gardian led the animals from meadows to meadows to provide for their needs. In the evening, they were locked in an enclosure or left free. To find his bulls in the early morning, the gardian was helped by an escalassoun, a ladder leaning on an isolated tree that allowed him to gain height and see far into the Camargue expanses. Such permanent surveillance ceased to be the norm since the advent of barbed wire fences, but the gardian continues to take care of his herd daily. He monitors the condition of each animal, changes their pasture, feeds them fodder, and makes sure they always have water nearby.
