A part of the Montagne de Reims Regional Nature Park has been listed as a Unesco World Heritage Site since 2015 under the theme “Coteaux, maisons et caves de Champagne”. In some champagne houses, such as Maison Marguet, the use of draught horses is not a return to the past. The sturdy Ardennes horses pack the ground less than the tractor and do not always walk in the same place. As a result, the soil is much more flexible and the microbial life much richer. By increasing the quality of the soil, the horses increase the quality of the grapes.
